In the Navarra region of the Spanish Pyrenees, lies the Roncal Valley, where the Roncal cheese is made from raw Latxa sheep´s milk, using the traditional hand crafted methods which are jealously guarded family secrets that are unwritten and handed down from one generation to the next. Slowly ripened in mountain air over the course of several months gives the cheese a rustic, nutty and olivey flavour and a moist, smooth texture. It is protected by its natural hard, pale, grey-brown rind. Expect some mould on the rind that can be removed brushing it with a slighly wet cloth. Unless the mould is in the paste of the cheese, the product is anyway in perfect conditions for human consumption
